Paratha

(3 varieties: methi (fenugreek), palak (spinach), kerala region (plain) )

Paratha is a crisp, rich unleavened whole-wheat bread which is very flaky. Each layer is separated by a generous layer of ghee*. The Circular wafers are fried on a lightly greased griddle until they puff slightly and turn pale gold. They are probably the favorite variety of Indian bread and are delicious in combination with kebabs or any other meal.
